Homemade Graham Crackers (Gluten Free, Dairy Free, Sugar Free)

  • 2 tsp. organic vanilla extract
  • 2 tsp. organic cinnamon
  • 1 tsp. non-aluminum baking powder
  • 1 large pastured egg
  • 2 Tbsp. organic virgin coconut oil, melted
  • 1 ½ c. ground organic almond flour
  • 8 Tbsp. organic flax seed meal
  • 4 Tbsp. Wholesome Sweeteners Organic Zero
  • 1 Tbsp. Navitas Naturals Organic Yacon Syrup
  • ¼ tsp. Celtic sea salt
  1. Preheat oven to 225 degrees F.
  2. In a medium bowl, combine almond meal, flax seed meal, erythritol, cinnamon, baking powder and salt. Mix well.
  3. Add in coconut oil, egg, yacon and vanilla and stir to form a dough.
  4. Transfer to freezer and chill 10 minutes.
  5. Place chilled dough on a sheet of unbleached parchment paper. Top dough with another sheet. Roll out dough between sheets of parchment to ⅛ inch thick. Make sure dough is of even thickness on interior and edges to prevent burning.
  6. Remove top layer of parchment. With a sharp knife, score dough into 2 inch crackers.
  7. Place parchment paper on cookie sheet and transfer to the oven.
  8. Bake one hour or until firm and edges are crispy. Turn off oven and leave crackers in oven another half hour to an hour.
  9. YIELD: Makes 20 2-inch squares.
