Grain Free Burger Buns (UPDATED)

Hi Friends,

I created this recipe almost a decade ago, and since then have learned a lot more about baking grain-free bread. In fact, I’ve conducted over 1,000 experiments since 2010 and published two books on baking grain-free, low carb and ketogenic breads.

For this reason, I’m not answering any additional questions on this recipe.

The improvements I’ve made in boosting rise and achieving better texture are explained in fine detail in my book – Keto Breads.

Grain Free Burger Buns Recipe

Serves: 4
  • 1 ½ c. ground almond flour
  • 2 large organic eggs
  • 1 Tbsp. raw honey
  • ½ tsp. non-aluminum baking soda
  • ½ tsp. Celtic sea salt
  1. Preheat oven to 350 degrees F.
  2. Mix almond flour, eggs yolks baking soda salt, and honey in a medium bowl.
  3. Beat egg whites until stiff peaks form.
  4. Fold egg whites into almond mixture, adding water if necessary to achieve a batter.
  5. Pour batter into a hamburger bun pan, filling halfway. Alternately, you may use BPA-free 6 oz cans (like those from wild salmon or tuna) and rinse well.
  6. Transfer to the oven and bake 10 minutes or until golden brown.
  7. Cool, slice in half and serve.

    I would like to make the Grain Free Burger Buns. Can you recommend a hamburger bun pan brand? I have been looking on line and have only found muffin top pans. Also, I was not sure of the size. I am. Excited to try your recipe!

      I love USA Pans mini cake pan to make burger buns. These pans are very high quality and have a silicone coating that makes them a safer nonstick alternative ( I also have their donut pan for making my Paleo donuts and bagels (

    I just made these today. I was only able to get 3 buns out of the one batch and they don’t look like the one pictured. Is there any way of making them rise a bit more?

    Hi Kelley, I’m making these today as well, and would love to know the trick to making them rise like your picture as well. That’s what drew me in to check out the recipe. In wondering if it’s the ground, not blanched almond flour that might make the difference in bulk.

  4. Hi Kelly, I’m on the South Beach diet Phase 1 and I’m trying to reduce my sugar intake. Can I omit honey altogether? Is the honey used as a bonding agent? If so, do you have an alternative to honey that has no natural sugar? I realize the honey is for flavor, just wondering if I can remove it from the receipe and how it will still taste.


  5. I think the non-aluminum baking soda is suppose to be non-aluminum baking powder. The recipe doesn’t really make any sense because I never heard of non-aluminum baking soda. Try it that way.

  6. Is there an answer to getting the buns to rise properly? I would like to try these but not if they don’t rise.

  7. The ingredients say aluminum-free baking soda. Do you mean baking powder? Baking soda is always aluminum-free. Thanks
