  • 1 medium cucumber, peeled, seeded and chopped
  • 2 Servings Spectrum Organic Golden Balsamic Vinaigrette Salad
  • 2 medium organic tomatoes, seeded and chopped
  • 8 c. organic baby spinach, chopped
  • 1 Tbsp. fresh lemon juice
  • ½ 2 lb. rotisseri chicken (organic), meat only, chopped
  • 1 medium organic green pepper, seeded and chopped
  • 2 Tbsp. fresh mint, chopped
  • 1 ½ Tbsp. fresh, flatleaf parsley, chopped
  1. Add chicken, spinach, tomatoes, pepper, cucumber, scallions, mint and parsley to a nonreactive bowl.
  2. Drizzle with salad dressing, stir well to combine.
  3. Separate salad onto serving dishes.
  4. Serve.
