  • 12 pieces Green & Black's Organic Dark 85% Chocolate
  • ¼ c. organic full fat coconut milk
  • ¼ c. unsweetened shredded coconut
  • ¼ c. organic cocoa powder
  • 1 ½ Tbsp. organic virgin coconut oil
  • ¼ tsp. SweetLeaf® Stevia Extract
  • ¼ c. organic pecans, chopped
  • 3 Tbsp. Enjoy Life Foods Semi-Sweet Chocolate Chips
  • 1 oz. dark rum
  • 6 Tbsp. Wholesome Sweeteners Organic Zero
  1. Powder erythritol in a coffee grinder or Magic Bullet blender. Preheat oven to 350 degrees F.
  2. Chop the dark chocolate bars and add to a double boiler or a metal bowl over a simmering pot of water. Add erythritol, coconut milk and stevia, stirring to incorporate.
  3. Add coconut oil and stir until melted. Stir in rum. Adjust amount of stevia if necessary.
  4. Pour into an 8 by 8 glass dish and freeze for 10-20 minutes, or until firm.
  5. Meanwhile, place the coconut and pecans on a cookie sheet (keeping separated). Transfer to the oven and bake 5-8 minutes, stirring once or twice until golden.
  6. Scoop out truffles with a melon baller or rounded teaspoon measure. Roll quickly into balls, and set on cookie sheet lined with wax paper. Freeze for five minutes.
  7. Melt the 70% chocolate bar and add a pinch of stevia to sweeten, if desired.
  8. Prepare the dry coatings. Add cocoa powder, toasted coconut and toasted pecans to three separate shallow dishes.
  9. Dip the chilled truffle fillings into melted chocolate with a fork, them immediately roll in nuts, coconut or cocoa powder. Store refrigerated in an airtight container in the fridge, or on the counter top for 24 hours.
  10. Serve at room temperature.
