Braised Rabbit with Fennel & Kalamata Olives Recipe

Serves: 4
  • 2 whole bulb organic fennel, sliced ½ in thick
  • ½ tsp. Celtic sea salt
  • 2 tsp. organic extra virgin coconut oil
  • 1 Tbsp. organic fennel seeds, crushed
  • ½ tsp. fresh ground black pepper
  • 2 c. organic low sodium chicken broth
  • 24 oz. free-range rabbit
  • 12 large organic Kalamata olives, pitted
  1. Preheat oven to 375 degrees F.
  2. Rinse rabbit and pat dry. Sprinkle with salt and pepper.
  3. Heat oil over medium high heat in a large, safe nonstick skillet with an oven-proof lid.
  4. When the oil is hot, add rabbit, seasoned side down. To sear, cook for 2 minutes; then flip and cook 2 additional minutes.
  5. Transfer seared rabbit to a plate.
  6. Arrange sliced fennel in a single layer in the bottom of the pan. Place seared rabbit over fennel. Sprinkle with fennel seeds. Add broth and Kalamata olives. (Note: If broth does not cover rabbit, add spring or filtered water).
  7. Cover pan with lid and transfer to oven. Bake 30-45 minutes.
  8. Serve.
