  • 3 c. organic blueberries
  • 1 oz. organic almonds, sliced
  • 2 tsp. organic arrowroot
  • 1 tsp. fresh organic lemon juice
  • 3 large organic egg whites
  • 1 c. organic erythritol
  • 1 tsp. organic vanilla extract
  • ¼ c. spring water
  1. Preheat oven to 400 degrees F.
  2. In a medium saucepan, combine berries with ½ cup erythritol, water, vanilla and lemon juice.
  3. Bring to a simmer over medium heat, stirring often.
  4. Add arrowroot and continue to stir until thickened, about 1 minute.
  5. In a large bowl, beat the egg whites until they form soft peaks.
  6. Gradually add in the remaining erythritol, 2 Tbsp at a time, and continue to beat for about 3 minutes.
  7. Gently swirl in ¾ cup of the berry mixture -leaving streaks in the egg whites.
  8. Spoon remaining berry mixture into 6, ½ cup ramekins.
  9. Top with the souffle mixture, sprinkle with almonds and bake until golden on top, about 6 minutes.
  10. Cool slightly, then serve.
