  • 5/4 c. ground organic almond flour
  • ½ tsp. organic cinnamon
  • 4 c. Cascadian Farm Organic Blueberries
  • 10 Tbsp. organic virgin coconut oil
  • 5 Tbsp. filtered ice water
  • 2 Tbsp. fresh lemon juice
  • ½ tsp. SweetLeaf® Stevia Extract
  • ¼ tsp. Celtic sea salt
  • 1 Tbsp. Bob’s Red Mill Arrowroot Starch
  1. Preheat oven to 450 degrees F.
  2. Melt coconut oil.
  3. Add thawed blueberries to a large bowl. Sprinkle with lemon juice, cinnamon, stevia and arrowroot. Stir to coat.
  4. In a large mixing bowl, combine almond flour and salt. Stir in coconut oil and mix until the mixture resembles course crumbs. Mix in ice water, 1 tbsp at a time, until the dough comes together. Chill the dough 15 minutes.
  5. Place dough on a piece of unbleached parchment paper and roll out. Invert a pie dish over the dough. Flip the dough over and mold to shape pie pan.
  6. Pour in blueberry mixture and transfer to oven.
  7. Bake for 15-20 minutes or until crust is golden brown.
  8. Cool slightly and serve.
