Basil Shrimp with Feta and Quinoa Recipe

  • 1 c. cherry tomatoes, diced
  • 2 tsp. organic olive oil
  • ¾ pound large wild shrimp, peeled and deveined
  • ¼ tsp. organic black pepper
  • ½ tsp. organic lemon zest
  • 1 Tbsp .organic lemon juice
  • ¼ tsp. Celtic sea salt
  • ¼ c. organic fresh basil, chopped
  • ½ c. organic quinoa
  • ¾ c. organic green onions, chopped
  • 2 oz. organic feta cheese, crumbled
  1. Preheat oven to 450°. Cook the quinoa according to box directions. Place the quinoa in a large bowl. Stir in oil and mix with tomato, onions, feta cheese, lemon zest and juice, salt and pepper. Place the quinoa mixture in casserole dish. Combine shrimp and basil. Arrange shrimp mixture on quinoa mixture. Cover casserole dish with a tight fitting lid or tin-foil.Bake at 450° for 25 minutes or until the shrimp are done.
