Instant Pot Mexican Pulled Chicken: The Super Simple Step-by-Step
This recipe is so simple, a 5 year old could do it (with supervision, of course). Begin by placing thawed pasture-raised chicken breasts in your the vessel of your Instant Pot…
Next, pour salsa over the chicken…
Now close and lock the lid. Set the time for 10 minutes (yep, that’s right… just 10 minutes) and ensure that the pressure is set on HIGH.
When you hear the beep, do a quick release and open the lid. Using two forks or a meat shredder, shred the chicken.
Adjust the seasoning, if desired (scroll all the way down for a few more ideas). Then serve your juicy pulled chicken…

Ingredients
- 2 breasts pastured chicken
- 1 16 oz. jar organic salsa
Instructions
- Place chicken breasts in Instant Pot Vessel.
- Pour salsa over chicken.
- Close and lock the lid. Se pressure to HIGH and time to 10 minutes.
- When time is up, do a quick release (a natural release is fine too)
- Shred the chicken with two forks or a meat shredder.
- Adjust seasoning and serve as desired.

Instant Pot Pulled Chicken: Create Dozens of New & Delicious Meals… from One Easy Recipe
Now that you know how easy it is to make fork-tender, Instant Pot pulled chicken, I want you to think about the many ways you can use this (and other Instant Pot recipes) to make a wide variety of unique meals.
Here are a few thoughts:
- Make it Mexican Tinga Chicken by adding a 7 oz. can of chipotle peppers in adobo + 1 sliced onion in place of the salsa
- Add 1 Tbsp. smoked paprika + 1 tsp. cumin with the salsa for a smoky pulled chicken
