Watercress with Oranges & Cinnamon-Spiced Walnuts Recipe

  • 8 c. chopped organic watercress
  • 1 whole organic orange
  • ¼ c. organic orange juice
  • 2 tsp. organic cinnamon, ground
  • 2 oz. organic walnuts
  • 1 tsp. organic orange zest
  1. Preheat oven to 350. In a small bowl, mix cinnamon, orange zest and orange juice. Supplement with stevia if desired. Add walnuts and stir to coat. Arrange walnuts in a single layer on a cookie sheet. Bake 20 minutes or just until crisp. Remove from oven an allow to cool. Wash watercress well and pat dry. Slice orange into ¼ inch slices and remove rind. Top with cinnamon-spiced walnuts. Serve with Citrus-Vinaigrette.
