Tempeh Chili with Black Beans Recipe

  • 1 can Eden Foods Organic Whole Tomatoes with Basil (28 oz)
  • 1 can Eden Foods Organic Black Beans
  • 1 tsp. organic garlic powder
  • 1 medium organic green bell pepper, diced
  • 8 oz. organic tempeh
  • 2 Tbsp. organic extra virgin olive oil
  • 1 medium organic onion, diced
  • 1 tsp. ground cumin
  • 3 Tbsp. organic chili powder
  • 2 tsp. organic tamari (gluten free soy sauce)
  • 1 clove organic garlic, crushed
  1. In a large pot, add half of the oil. When shimmering, add the onions and green bell pepper. Cook, stirring, over medium heat, until tender and light brown.
  2. Meanwhile, put tempeh in a large saute pan and cover with water. Add soy sauce and let simmer over high heat for 10 minutes or until water is absorbed, stirring occasionally.
  3. When water is mostly absorbed, mash tempeh with a fork, to create a crumbly but chunky texture. Reduce heat to medium and add the onion mixture, garlic, cumin, chili powder and remaining oil.
  4. Stir in tomato sauce, beans and additional water, if necessary.
  5. Simmer, covered, for 30 minutes, stirring occasionally.
  6. Serve.
