Spinach, Chickpea & Goat Cheese Salad Recipe

Ingredients
  • 1 c. cherry tomatoes, halved
  • 2 oz. fresh, organic goat cheese
  • 1 tsp. organic dried oregano
  • 4 c. organic baby spinach
  • 1 clove organic garlic, minced
  • 2 Tbsp. chopped organic red onion
  • 1 tsp. organic dried basil leaves
  • 1 tsp. organic extra virgin olive oil
  • 1 c. organic canned chickpeas
Instructions
  1. Drain and rinse chickpeas well.
  2. Combine chickpeas, garlic, onion, basil, oregano and 1 tsp oil. Stir to combine.
  3. Layer spinach on plates. Top with chickpea mixture, tomatoes and goat cheese.
  4. Drizzle with balsamic vinegar and top with fresh ground black pepper.
  5. Serve.
