Ingredients
  • 1 ½ c. Eden Foods Organic Kidney Beans
  • 1 ½ c. Eden Foods Organic Cannellini (White Kidney) Beans
  • ½ tsp. sea salt
  • 4 c. Imagine Organic Low Sodium Vegetable Broth
  • ¼ tsp. freshly ground black pepper
  • 1 tsp. organic oregano, dried
  • 2 tsp. organic basil, dried
  • 2 Tbsp. organic extra virgin olive oil
  • 4 cloves organic garlic, sliced
  • 1 medium organic onion, diced
  • 2 medium organic carrots, sliced
  • 1 c. chopped organic broccoli
  • 1 oz. dry Ancient Harvest Quinoa Pasta Shells
  • 1 28 oz. can Eden Foods Organic Crushed Tomatoes with Onion and Garlic (28 oz)
Instructions
  1. Add the oil to a large pot and heat over medium heat.
  2. Add the garlic and onion and saute, stirring, 5 minutes.
  3. Pour in the broth, canned tomatoes and spices and bring to a boil. Simmer 10 minutes.
  4. Add the carrots and broccoli. Simmer 5 minutes.
  5. Add the beans and pasta. Simmer 10 minutes, or until pasta is al dente.
  6. Serve.
