Shrimp Caesar Salad

Shrimp Caesar Salad Recipe

Ingredients
  • 4 oz. organic Asiago cheese, grated
  • 2 Tbsp. organic extra virgin olive oil
  • 3 Tbsp. organic lemon juice
  • 2 tsp. organic Dijon mustard
  • 3 whole anchovies, coarsely chopped
  • 1 clove organic garlic, coarsely chopped
  • ½ tsp. freshly ground black pepper
  • 8 c. shredded organic romaine lettuce
  • 1 pound wild shrimp
Instructions
  1. First, cook the shrimp. Bring a pot of filtered water to a boil. Add shrimp. Cook until tails curls and shrimp turn pink. Drain shrimp and chill over ice.
  2. Add lemon juice, mustard, anchovies and garlic to a food processor or Magic Bullet. Process until smooth. With the motor running, gradually add oil; process until creamy. Add ¼ cup Asiago cheese and black pepper; pulse until combined.
  3. Peel and devein the shrimp.
  4. Combine romaine and shrimp in a large bowl. Add the dressing and toss to coat.
  5. Divide among plates, top with the remaining ¼ cup Asiago cheese.
  6. Serve.
