Raw Avocado Gazpacho Recipe

Ingredients
  • 1 ½ c. chopped tomatoes
  • 1 tsp. organic maple syrup
  • ½ tsp. Celtic sea salt
  • 2 medium organic cucumbers, chopped
  • ¼ tsp. organic paprika
  • 1 medium avocado, diced
  • ½ whole organic chile pepper, sliced
  • 1 clove organic garlic, minced
  • 2 whole lemons, juiced
  • 1 c. filtered water
Instructions
  1. Reserve 2 Tbsp. avocado for garnish.
  2. Combine remaining avocado, water, cucumbers, tomatoes, pepper, garlic, lemon juice, salt and maple syrup in a blender or VitaMix.
  3. Start blender on low speed, then switch to high. Blend until creamy, about 2 minutes.
  4. Pour into soup bowls. Top with reserved avocado and paprika if desired.
