  • 2 large organic, omega-3 eggs
  • 2 Tbsp. arrowroot
  • 1 ½ c. organic, grass-fed milk (preferably raw)
  • 6 c. organic raspberries
  • ½ c. organic, grass-fed cream (preferably raw)
  • ¾ c. organic erythritol (try Zsweet)
  • 1 tsp. organic vanilla extract
  • 1 Tbsp. fresh organic lemon juice
  • ½ tsp. organic lemon zest
  1. Preheat the oven to 450°. Spread ½ cup of the raspberries in each of twelve 4-ounce gratin dishes. Arrange the gratin dishes on 2 baking sheets. In a bowl, whisk the milk with the cream, eggs, Zsweet, arrowroot, vanilla, lemon juice and zest until smooth. Ladle ¼ cup of the custard into each dish; bake for about 15 minutes, until the centers are set. Transfer the custards to wire racks and let stand for 30 minutes. Serve.
