Ingredients
  • 1 tsp. fennel seeds, crushed
  • 1 medium organic onion, sliced
  • ½ tsp. organic dried thyme
  • 4 Tbsp. organic lemon juice
  • ¼ c. organic orange juice
  • 4 tsp. organic orange peel, grated
  • ½ tsp. organic dried basil
  • ¼ c. Imagine Organic Low Sodium Vegetable Broth
  • 2 cloves organic garlic, minced
  • 24 oz. yellowtail snapper
  • 1 c. organic white wine
  • 1 oz. can Eden Foods Organic Diced Tomatoes with Basil (14.5 oz)
  • 1 whole organic bay leaf
  • ½ tsp. organic dried oregano
Instructions
  1. Heat broth in large, safe nonstick skillet.
  2. Add onion, and saute over moderate heat 5 minutes or until soft.
  3. Add all remaining ingredients except fish. Stir well and simmer 30 minutes, uncovered.
  4. Meanwhile, preheat oven to 375 degrees F.
  5. Arrange fish in 10x6-inch baking dish; cover with sauce.
  6. Bake, uncovered, for about 15 minutes or until fish flakes easily.
