  • ½ medium organic avocado, sliced
  • 1 c. organic salsa
  • 1 c. Eden Organic Refried Pinto Beans
  • 8 large organic omega-3 eggs
  1. Heat two safe, nonstick pans over medium heat.
  2. Coat both with nonstick spray.
  3. Spread beans in one pan to heat through.
  4. In the other pan, crack the eggs and cook to desired temperature. (For "sunny side up", cook eggs one one side only for about 2 minutes and do not flip. For "over easy" cook about 2 minutes, then flip and cook one minute more. "Over medium" and "over well" take and additional 2 minutes to set)
  5. Transfer eggs and beans to serving plates. Top with salsa and avocados. Serve.
