Herb Chicken Paillards with Artichoke Tomato Salsa

Herb Chicken Paillards with Artichoke Tomato Salsa Recipe

Ingredients
  • 3 cloves organic garlic, minced
  • 2 Tbsp. fresh basil
  • 1 Tbsp. organic red wine vinegar
  • 24 oz. organic pasture-raised chicken breast cutlets
  • 8 small organic kalamata olives, halved
  • 1 whole organic lemon, juiced
  • 2.5 Tbsp. organic extra virgin olive oil
  • 2 tsp. dried oregano
  • 1 medium organic tomato, chopped
  • ½ c. organic artichoke hearts, quartered
Instructions
  1. First, prepare the chicken.
  2. Add cutlets to a large zip-top bag or marinating dish with half the oil, half the garlic, lemon juice, sea salt and pepper. Marinate in the refrigerator for 15 minutes.
  3. Meanwhile, prepare salsa. In a non-reactive bowl combine tomatoes, artichokes, olives, vinegar, basil and remaining oil and garlic. Set aside.
  4. Preheat grill or prepare Flavorwave. Grill cutlets 2-3 minutes per side or 5-6 minutes total in Flavorwave.
  5. Place chicken on serving dishes and top with salsa.
  6. Serve.
