  • ¼ tsp. freshly ground black pepper
  • 1 medium organic cucumber, peeled and diced
  • ¼ c. organic Kalamata olives, halved
  • ½ medium organic red onion, diced
  • 2 Tbsp. fresh mint, chopped
  • ¼ tsp. Celtic sea salt
  1. Combine all ingredients in a medium, non-reactive bowl. Season with salt and pepper. Mix well. Serve.
