Chocolate Souffle

Serves: 4
  • 4 Tbsp. organic erythritol
  • ½ c. organic milk
  • 2 Tbsp. organic butter
  • 4 Tbsp. organic cocoa
  • 4 large organic omega-3 eggs
  1. Preheat oven to 350 degrees F.
  2. Melt butter in a medium saucepan over low heat.
  3. Add half of the erythritol to butter and stir to dissolve. Continue stirring butter and erythritol and incorporate cocoa.
  4. Add milk and turn heat to medium while whisking.
  5. Once fully mixed, remove from heat and allow to cool.
  6. Separate eggs. In an small bowl, beat egg whites with remaining erythritol on high speed until soft peaks form.
  7. Whisk egg yolks into cooled cocoa mixture (NOTE: if the chocolate mixture is too hot, you will have scrambled eggs, not souffle).
  8. Fold cocoa mixture gently into egg white mixture.
  9. Spoon into small (7 oz) ramekins and bake at 350 for 20 minutes.
  10. Serve.
