Chicken Milanese with Mixed Greens Recipe

Ingredients
  • 2 oz. organic parmesan
  • 2 Tbsp. organic avocado oil, divided
  • 2 -8oz. breasts pasture-raised chicken, pounded to ½" cutlets
  • 1 Tbsp. organic lemon juice
  • ½ tsp. Celtic sea salt
  • 0.125 tsp. freshly ground pepper
  • 6 c. shredded organic mixed greens
Instructions
  1. Combine lemon juice, half the oil, salt and pepper in a shallow bowl. Whisk to combine. Separate half of the mixture into a small dish for dressing; use other portion as marinade.
  2. Add chicken and toss to coat in marinade. Let stand 15 minutes.
  3. Heat remaining oil in a safe skillet over medium-high heat.
  4. Add half of the chicken cutlets. Cook 3 to 4 minutes per side, until lightly golden and cooked through. Transfer to plate and cover. Repeat with remaining cutlets.
  5. When ready to serve, toss greens with remaining dressing.
  6. Arrange cutlets on plates, top with greens and Parmesan cheese and serve.
