Ingredients
  • 0.125 Tbsp. Bob’s Red Mill Xanthan Gum
  • 1 tsp. non-aluminum baking powder
  • 4 tsp. organic vanilla extract
  • ½ c. chopped organic walnuts
  • 8 Tbsp. organic virgin coconut oil
  • 2 large pastured organic eggs
  • ¾ c. organic erythritol
  • 2.5 c. ground almond flour
  • ⅓ Tbsp. organic blackstrap molasses
  • ¼ tsp. sea salt
  • ½ tsp. SweetLeaf® Stevia Extract SweetLeaf Stevia Extract
  • 8 Tbsp. Enjoy Life Foods Semi-Sweet Chocolate Chips Enjoy Life Foods Semi-Sweet Chocolate Chips
Instructions
  1. Preheat oven to 350 degrees F.
  2. Add erythritol and sea salt to coffee grinder or Magic Bullet (flat blade). Blend until a powdery consistency is achieved throughout.
  3. Melt oil in a small saucepan over low heat just until melted (ensure oil is not hot). When melted, whisk in eggs and vanilla. Then whisk in erythritol, sea salt, stevia, and blackstrap molasses.
  4. Mix remaining dry ingredients together and stir into wet ingredients to form a dough.
  5. Fold in walnuts and chocolate chips.
  6. Shape dough into 1-inch balls and press onto an ungreased cookie sheet
  7. Bake 10-12 minutes, until just light brown on the bottom.
  8. Let cool completely on cookie sheet.
