Artichokes with Lemon Butter

Artichokes with Lemon Butter Recipe

Serves: 4
Ingredients
  • 2 Tbsp. whole coriander seeds
  • 4 medium organic artichokes
  • 1 stick organic butter
  • ½ tsp. freshly ground black pepper
  • 4 whole organic lemons
  • 2 tsp. Celtic sea salt
Instructions
  1. Trim the stems of the artichokes to about 2 inches.
  2. Bring 4 quarts of water to a boil in a large pot.
  3. Squeeze all lemons.
  4. Put half of the lemons juice into water and add lemon peels, coriander seeds and salt.
  5. Place artichokes in the cooking liquid, and cover with a heavy plate or lid to keep them from floating.
  6. Boil 15 minutes, until a paring knife, inserted where the stem meets the bottom, comes out easily.
  7. Melt butter in a saucepan. Mix in juice of remaining lemon, salt and pepper.
  8. Serve one whole artichoke per serving, accompanied by a ramekin of butter sauce and a bowl for discarded leaves.
