Are you looking for a quick and delicious recipe for Paleo Curry Chicken Salad Wraps? You’ve come to the right place!
One of the most popular recipes on the Healing Gourmet website is our Pressure Cooker Chicken. And many of our readers have written asking for “second meal” ideas for the leftovers. Of course, you could make a quick and hearty chicken soup… Asian stir fry… or chicken pesto pasta. The possibilities for this versatile, meltingly-tender meat are endless. And today, I want to share one of my favorites…
Curry Chicken Salad Wraps: A Tasty Way to Get More Turmeric in Your Diet
In my ongoing quest to get more disease-fighting turmeric in my diet, I whipped up a quick batch of curry chicken salad wraps using leftovers from a whole chicken cooked in the pressure cooker. I also used the indispensable Paleo Wraps (with turmeric) and my favorite mayo (by Primal Kitchen) plus kale and avocado for added flavor and superfood nutrition.
With the chicken pre-cooked, this delicious, healthy and filling lunch was on the table in seven minutes flat. Feel free to add additional seasonings such as cayenne pepper and sea salt, to taste.
I hope you enjoy this recipe as much as we did!
- 1 pound pasture-raised chicken (pressure cooked)
- 4 Paleo Wraps (Turmeric)
- 4 Tbsp. Primal Kitchen Mayonnaise
- 2 Tbsp. fresh lemon jucie
- 1 Tbsp. organic turmeric
- 1 cup organic kale, torn
- 1 medium avocado, sliced
- In a medium bowl, whisk together the mayonnaise, lemon juice and turmeric.
- Add the chicken and stir to coat. Lay wraps flat and top with kale and avocado, then chicken.
- Secure with a toothpick and enjoy.
