Watermelon Rind Relish Recipe

  • 1 c. organic apple cider vinegar
  • 2 c. organic erythritol (try ZSweet)
  • ½ tsp. Celtic sea salt
  • 2 tsp. organic ground ginger
  • 1 Tbsp. organic dry mustard powder
  • ⅓ Tbsp. organic celery seed
  • 2 tsp. organic ground turmeric
  • 12 c. spring water
  • 6 c. of an organic watermelon
  1. Bring water to a boil in a large saucepan. Add rind; cook 3 minutes. Drain well. Combine erythritol and remaining ingredients in pan; bring mixture to a boil. Reduce heat, and simmer 2 minutes. Stir in watermelon rind; simmer, uncovered, 30 minutes or until most of liquid is absorbed, stirring frequently. Cool; pour relish into airtight containers. Refrigerate Watermelon Rind Relish in airtight containers up to two months.
