Ingredients
- 2 Tbsp ground golden flaxseeds
- 2 Tbsp cold grass-fed butter
- 5 large organic egg whites
- 1 tsp baking powder
- ⅗ cup blanched almond flour
- ⅖ cup coconut flour
Instructions
- In a medium bowl, whisk the almond flour, coconut flour, flaxseeds, and baking powder.
- Place the chopped butter in the freezer briefly, then mix it into the flour mixture using your hands or a pastry blender until it reaches a coarse, sand-like consistency.
- Transfer the mixture to the freezer while you preheat the oven to 425°F and prepare a cast iron griddle or cookie sheet.
- Whip the egg whites to stiff peaks. Fold them into the flour mixture until a thick batter forms.
- Scoop 2 tablespoons of batter per biscuit onto the prepared pan, shaping gently.
- Bake for 16-18 minutes or until golden brown.
