Ingredients
  • 2 Tbsp ground golden flaxseeds  
  • 2 Tbsp cold grass-fed butter  
  • 5 large organic egg whites  
  • 1 tsp baking powder  
  • ⅗ cup blanched almond flour  
  • ⅖ cup coconut flour  
Instructions
  1. In a medium bowl, whisk the almond flour, coconut flour, flaxseeds, and baking powder.
  2. Place the chopped butter in the freezer briefly, then mix it into the flour mixture using your hands or a pastry blender until it reaches a coarse, sand-like consistency.
  3. Transfer the mixture to the freezer while you preheat the oven to 425°F and prepare a cast iron griddle or cookie sheet.
  4. Whip the egg whites to stiff peaks. Fold them into the flour mixture until a thick batter forms.
  5. Scoop 2 tablespoons of batter per biscuit onto the prepared pan, shaping gently.
  6. Bake for 16-18 minutes or until golden brown.
