Dill Salmon Salad Over Spring Mix Recipe

  • ¼ medium organic red onion, finely chopped
  • 6 c. Earthbound Farm Organic Spring Mix
  • 1 tsp. organic dry mustard
  • 4 Tbsp. organic lemon juice
  • 1 pinch Celtic sea salt
  • ¼ tsp. organic dill weed, dried
  • ¼ tsp. freshly ground black pepper
  • 2 cans Wild Planet Sockeye Salmon
  • 8 organic cherry tomatoes
  1. Add lemon juice, mustard, olive oil, salt and pepper to a small bowl. Whisk well and set aside.
  2. Drain salmon and add to a medium bowl.
  3. Add the onions and dill to the salmon. Stir well to combine.
  4. Arrange spring mix on plates. Top with equal portions of salmon mixture.
  5. Place four cherry tomatoes on each salad. Drizzle with dressing. Serve.
