Warm Fennel & Bitter Greens Recipe

  • 1 bunch organic watercress, thick stems discarded
  • 2 Tbsp. organic red wine vinegar
  • ½ tsp. Celtic sea salt
  • 1 head organic radicchio, leaves torn
  • 2 oz. organic Parmesan cheese, grated
  • 1 tsp. organic honey
  • ¼ c. organic extra virgin olive oil
  • 1 whole bulb organic fennel bulb, cored and thinly sliced
  • 5 oz. organic baby arugula
  • ¼ tsp. freshly ground black pepper (to taste)
  1. In a large bowl, whisk the vinegar with the honey. Add the olive oil. Whisk to emulsify. Season with salt and pepper. Add the remaining ingredients and toss well. Heat a large, deep skillet until very hot. Add the dressed salad and toss over high heat about 30 seconds. Serve.
