Spinach, Tomato & Feta Scramble Recipe

  • 1 ½ oz. organic feta cheese, crumbled
  • 1 medium organic tomato, diced
  • 4 large pasture-raised egg whites
  • 6 large pasture-raised eggs
  • 2 c. Earthbound Farm Baby Spinach
  1. Heat a medium, safe nonstick pan over medium heat.
  2. Spray with organic, high heat spray.
  3. Add tomatoes and spinach. Saute until tender, about 2 minutes.
  4. Whisk eggs and egg whites and pour over spinach and tomatoes.
  5. Cook, stirring, over medium-low heat until almost set.
  6. Add the cheese, stir to incorporate. Serve.
