Spinach, Apple, and Walnut Salad Recipe

  • 1 Tbsp. organic apple cider vinegar
  • 8 c. Earthbound Farm Baby Spinach
  • 3 Tbsp. organic extra virgin olive oil
  • 1 medium organic apple, cored and diced
  • ¼ tsp. freshly ground black pepper
  • 4 Tbsp. organic lemon juice
  • 1 Tbsp. raw honey
  • ½ tsp. Celtic sea salt
  1. In a large bowl, add apples and half of the lemon juice. Toss to coat.
  2. Add in spinach and walnuts.
  3. Whisk together remaining lemon juice, olive oil, vinegar, honey, salt, and pepper to taste.
  4. Pour dressing over spinach-apple mixture.
  5. Serve.
