  2. Add oil and heat until shimmering.
  3. Whisk eggs in a small bowl.
  4. Add eggs to pan.
  5. Cook 2-3 minutes, stirring, to desired doneness.
  6. Serve with hot sauce and fresh ground black pepper, if desired.
