Shiitake Mushroom & Rappini Stuffed Chicken Breasts Recipe

  • 1 Tbsp. organic extra virgin avocado oil
  • 3 c. organic broccoli rabe (rappini), finely chopped
  • 2 cloves organic garlic
  • 1 whole organic shallot, peeled and minced
  • 2 -8oz. breasts organic, pasture-raised chicken, split
  • ⅓ c. fresh parlsey, finely chopped
  • ¼ tsp. fresh ground black pepper
  • 6 oz. organic shiitake mushrooms, stems removed, chopped
  1. Preheat oven to 400 F.
  2. In a large skillet, warm the oil over medium heat.
  3. Add the shallot, stirring with a wooden spoon for 1 minute. Add the mushrooms and garlic, stirring about 4 minutes.
  4. Season with black pepper, add the broccoli rabe over mushrooms, cover, and steam 2 minutes. Remove from the heat, add the parsley, and mix well.
  5. Slice a 3-inch section of the chicken horizontally to form a pocket.
  6. Spoon in ⅓ cup of the mushroom filling into each of the breasts, tuck the ends under, and secure them with a toothpick.
  7. Place the chicken in a roasting pan, and season with black pepper.
  8. Bake to golden brown and juices run clear, about 35 minutes.
