  • 2 Tbsp. organic, raw apple cider or coconut vinegar
  • 1 whole bulb organic fennel, halved, sliced paper thin
  • 8 c. organic arugula
  • 2 oz. organic Parmesan cheese, shaved
  • ⅓ c. organic extra virgin olive oil
  • 1 pinch Celtic sea salt
  • 4 Tbsp. fresh organic lemon juice
  • 12 small organic black olives
  1. Whisk first lemon juice and vinegar in small bowl to blend. Gradually whisk in oil. Season sea salt and fresh ground black pepper. Toss arugula, fennel, and olives in large bowl with dressing. Sprinkle cheese over.
