  • 2 scoops Jay Robb's Vanilla Whey Protein Jay Robb’s Vanilla Protein
  • ¼ tsp. organic cinnamon
  • ⅓ c. organic coconut flour
  • 1 tsp. non-aluminum baking powder
  • ¼ tsp. Celtic sea salt
  • 2 large organic eggs
  • ¾ c. organic coconut milk
  • 2 Tbsp. filtered or spring water
  • 2 Tbsp. organic virgin coconut oil
  1. In a large bowl, sift whey, coconut flour, baking powder, cinnamon and salt together.
  2. In a medium bowl, mix remaining ingredients.
  3. Mix wet ingredients into dry and whisk until smooth.
  4. Let stand at room temperature for 15 minutes.
  5. Spray the bottom of a safe, nonstick skillet or pancake griddle with coconut oil and heat over medium heat.
  6. Pour approximately ¼ cup of batter into 4” circles, making sure to allow space between each pancake.
  7. Cook until bubbles form on surface and edges are cooked to golden.
  8. Flip and cook until pancake is set.
  9. Serve or freeze in airtight zip seal bags.
