Pecan Chicken Salad with Green Apple Vinaigrette Recipe

  • ½ tsp. Celtic sea salt
  • 2 c. Earthbound Farm Organic Bibb Lettuce Leaves Earthbound Farm Organic Bibb Lettuce
  • 1 tsp. raw honey
  • 4 Tbsp. olive oil
  • 1 medium organic Granny Smith apple, finely diced
  • ½ c. organic pecans
  • 1 stalk organic celery, thinly sliced
  • 2 Tbsp. chopped rganic shallot
  • 2 -8oz. breasts pasture-raised chicken breast
  • 2 Tbsp. fresh lemon juice
  • 1 c. seedless organic red grapes, halved
  1. First, poach the chicken. In a large, 2 quart heavy saucepan, bring 2 inches of filtered water to a boil. Add chicken and poach at a bare simmer, partially covered, until just cooked through, 12 to 14 minutes.
  2. While chicken cooks, whisk together lemon juice, honey, and salt in a medium bowl until honey and salt have dissolved. Whisk in shallot and oil, then mix in apple.
  3. Slice chicken.
  4. Divide lettuce, grapes, pecans, chicken and celery between serving plates and drizzle with vinaigrette.
  5. Serve.
