  • 1 pound grass-fed ground beef
  • 1 clove organic garlic, minced
  • ½ tsp. freshly ground black pepper
  • ½ tsp. Celtic sea salt
  • 1 medium organic onion, finely diced
  • 2 tsp. organic dried parsley
  • 1 tsp. organic thyme
  • ½ c. organic almond meal
  • ¼ c. organic crimini mushrooms, finely diced
  • 2 large pasture-raised eggs
  • 2 tsp. organic extra virgin olive oil
  • 1 tsp. organic dried oregano
  1. Preheat oven to 350 degrees F.
  2. Heat a medium, safe nonstick skillet over medium-high heat. Add the oil and swirl to coat the pan.
  3. Add the onion and garlic and cook 2 minutes. Add the mushrooms and cook 4-5 minutes until they release their juices. Drain.
  4. In a medium bowl, whisk the eggs. Add ground beef, onion/mushroom mixture, herbs, salt, pepper and almond meal. Mix gently to combine ingredients.
  5. Place meatloaf in a glass baking dish, top with tomatoes and bake 45 minutes or until internal temperature reaches 160 degrees F.
