Orange Almond Lace Cookies Recipe

  • 1 ½ cup. organic almonds, finely chopped
  • ½ tsp. Celtic sea salt
  • 1 large organic egg, beaten
  • ¾ c. organic erythritol
  • 2 tsp. organic orange peel
  • 1 ½ sticks organic butter
  • 1 Tbsp. organic almond flour
  1. Preheat oven to 325 degrees F.
  2. Line large baking sheet with unbleached parchment paper.
  3. Stir ¾ cup butter in heavy medium saucepan over medium-low heat until melted. Remove from heat and allow to cool slightly.
  4. Stir in nuts, erythritol, stevia, almond flour, orange peel and salt; then stir in egg.
  5. Drop batter by generous tablespoonfuls onto prepared baking sheet, spacing 2 inches apart (cookies will spread).
  6. Bake cookies until lacy and golden brown, about 15 minutes.
  7. Gently slide parchment paper with cookies onto rack; cool completely.
  8. Transfer cookies to paper towels.
  9. Repeat with remaining batter, lining cooled baking sheet with clean parchment for each batch.
