  • 1 Tbsp. balsamic vinegar
  • 2 oz. organic parmesan cheese, grated
  • 6 Servings Miracle Noodles
  • 1 medium yellow squash, halved, seeded and sliced thin
  • 2 Tbsp. extra virgin olive oil
  • 1 c. oil-cured black olives, sliced
  • 2 whole, large organic yellow bell peppers, seeded and sliced
  • 6 cloves organic garlic, chopped
  • ⅓ c. fresh basil
  • 1 medium organic yellow onion, chopped
  • 2 medium organic tomatoes, peeled, seeded and chopped
  1. Bring a pot of water to a boil. Plunge tomatoes into boiling water for 30 seconds; then plunge into iced water. Cut in half, remove seeds, then coarsely chop. Meanwhile, in a large saucepan, heat oil over medium-high heat. Add garlic and onion and cook for 3 minutes. Stir in peppers and squash cooking about 5 minutes, until tender. Reduce heat to medium; add Miracle Noodles, chopped tomatoes, olives and vinegar. Cook for 4 to 5 minutes. Toss in basil. Serve with grated cheese.
