  • 2 oz. organic feta cheese, crumbled
  • ¼ tsp. fresh ground black pepper (to taste)
  • 8 spears, small organic asparagus, cut into ½ inch slices
  • 1 Tbsp. organic extra virgin olive oil
  • 1 c. low sodium, organic chicken broth
  • 2 -8oz. breasts organic, pastured chicken
  • 1 medium organic red onion, chopped fine
  • ½ c. organic baby green peas, frozen
  • 12 organic cherry organic tomatoes, halved
  • ¼ c. fresh basil leaves, chopped
  • ¼ c. fresh flat-leaf parsley, chopped
  • 4 Servings Miracle Noodles
  1. Rinse Miracle Noodles. Drain and set aside. Heat a large saucepan over medium-high heat and spray with oil. Saute onion 1 minute. Add asparagus, chicken, and peas. Stir to blend. Add broth and cook until asparagus is crisp-tender, about 2 minutes. Stir in tomatoes and cook until heated through. Season to taste with pepper. Stir in noodles and heat through. Sprinkle feta cheese and extra-virgin olive oil over the top. Add basil and parsley for garnish and serve.
