Middle Eastern Lamb Skewers Recipe

  • 1 Tbsp. organic parsley
  • 2 Tbsp. organic avocado oil
  • 2 tsp. Celtic sea salt
  • 0.15 tbsp. organic lemon zest
  • 1 medium organic onion, quartered
  • 1 clove organic garlic
  • 3 Tbsp. organic lemon juice
  • 1 tsp. ground allspice
  • 16 oz. trimmed grass-fed lamb loin, cut in 1-inch cubes
  1. In a blender or Magic Bullet, combine the onion, garlic, parsley sprigs, lemon zest, lemon juice, allspice, and salt. Puree until smooth.
  2. Transfer the marinade to a resealable plastic bag, add the cubed lamb and turn to coat. Seal the bag, expelling any air. Refrigerate the lamb for at least 6 hours or preferably overnight.
  3. Light a grill, preheat a grill pan or prepare your Flavorwave/NuWave.
  4. Drain the lamb. Thread the lamb onto 4 long skewers, leaving a bit of room between the cubes.
  5. Brush the lamb with the oil and grill over high heat, turning occasionally, until brown, about 5 minutes for medium-rare meat.
  6. Serve.
