
Lemon Garbanzo Soup
- ¼ tsp. cumin seed
- 4 Servings Imagine Organic Free Range Chicken Broth
- 2 oz. fresh organic baby spinach
- 1 16-oz cans organic chickpeas, drained and rinsed
- ⅓ c. fresh organic lemon juice
- 1 whole organic lemon, sliced for garnish (optional)
- 2 large organic egg whites
- 2 tsp. organic lemon zest
- 5 cloves organic garlic, chopped
- ½ tsp. organic cayenne pepper
- ½ tsp. organic turmeric
- Combine broth, garbanzo beans, garlic, cumin, and turmeric in a large pot.
- Bring to a boil, reduce heat, and simmer for 15 minutes.
- Whisk eggs, lemon juice, and zest in bowl. Whisk 2 cups of hot soup into the egg white mixture. Add back to pot along with baby spinach, stirring over medium-low heat for 5 minutes
- Add cayenne, ladle into bowls, float lemon slices atop, and serve.
