Herbed Mediterranean Lamb with Arugula

Herbed Mediterranean Lamb with Arugula Recipe

  • ¼ c. organic dry white wine
  • 2 cloves organic garlic, pressed
  • 3 tsp. fresh oregano, chopped
  • 6 oz. organic arugula
  • 2 whole organic lemons, cut into wedges
  • 2 tsp. organic capers
  • ¼ tsp. Celtic sea salt
  • 1 Tbsp. fresh mint, chopped
  • 48 oz. grass-fed lamb loin
  • 2 Tbsp. fresh rosemary, chopped
  • ¼ tsp. freshly ground black pepper
  1. Cut lamb into 1-1 ½ chunks. Place lamb in 15x10x2-inch glass dish. Drizzle with wine and sprinkle lightly with salt and pepper.
  2. Add garlic to a small nonreactive bowl. Mix in oil, herbs, and capers. Pour mixture over lamb. Cover; chill at least 2 hours and up to 1 day.
  3. Toss arugula and 2 tablespoons oil in large bowl. Arrange arugula on large platter as bed for lamb.
  4. GRILL METHOD: Spray grill with nonstick spray and heat to medium-high heat. Thread lamb onto metal skewers; sprinkle with salt and pepper. Grill to desired doneness, turning occasionally, about 10 minutes for medium-rare. FLAVORWAVE/NUWAVE METHOD: Thread lamb onto skewers and place on lower grate and cook at 300 F for 10 minutes for medium-rare.
  5. Slide cooked lamb onto arugula; serve with lemon wedges.
