
Herb Roasted Turkey Tenderloin
- 2 whole organic shallots, chopped
- ½ c. organic dry white wine
- 1 Tbsp. organic extra virgin olive oil
- 32 oz. pasture-raised turkey tenderloin
- 2 Tbsp. fresh tarragon, chopped
- ½ tsp. Celtic sea salt
- ¼ tsp. freshly ground black pepper
- 1 c. Imagine Organic Free Range Chicken Broth
- 2 Tbsp. organic apple cider vinegar
- Preheat oven to 400 degrees F.
- Add oil to a large baking dish or Dutch Oven.
- Season turkey with salt and black pepper and place in baking dish.
- Arrange shallots over turkey in pan.
- In a small bowl, combine wine, broth, vinegar, and tarragon. Pour mixture over turkey.
- Transfer to oven and roast 40 minutes, or until an instant-read thermometer registers at least 160 degrees F.
- Let turkey rest 10 minutes before slicing into ½-inch thick slices.
- Serve.
