Halibut with Artichoke Pesto Recipe

  • 24 oz. wild Pacific halibut
  • ½ c. Imagine Organic Low Sodium Vegetable Broth
  • 2 Tbsp. organic extra virgin olive oil
  • 2 6.5 oz. jars organic artichokes, drained
  • 1 c. fresh basil
  • ½ c. organic walnuts, chopped
  • 2 cloves organic garlic, chopped
  • 1 whole organic lemon, juice and zest
  • ¼ tsp. freshly ground black pepper
  1. In a food processor or Magic Bullet, combine artichokes, basil, walnuts, garlic, lemon juice and zest, broth and olive oil. Blend until creamy.
  2. Season with pepper and set aside.
  3. Brush halibut with olive oil and sprinkle with sea salt.
  4. Prepare grill or Flavorwave oven (preferred). Grill halibut for 10-12 minutes or until desired doneness.
  5. Transfer fish to platter or serving dishes.
  6. Top with 2 tablespoons pesto.
  7. Serve.
