Grass-Fed Steak with Chickpeas, Tomatoes, and Feta

Grass-Fed Steak with Chickpeas, Tomatoes, and Feta Recipe

Serves: 4
  • ½ tsp. freshly ground black pepper
  • ½ c. fresh cilantro
  • 2 oz. organic feta cheese
  • 1 Tbsp. organic avocado oil
  • 8 c. Earthbound Farm Mixed Baby Greens
  • 1 c. Eden Foods Organic Garbanzo Beans (Chick Peas)
  • 24 oz. grass-fed strip steak
  • ½ tsp. Celtic sea salt
  • 2 Tbsp. fresh organic lemon juice
  • 1 medium organic tomato, roughly chopped
  1. Drain and rinse chickpeas.
  2. Season steak with half of the salt and pepper.
  3. In a large, safe, nonstick skillet, heat half of the oil over medium high heat.
  4. Add the steak and cook to the desired doneness, (4 to 6 minutes per side for medium-rare). Remove from the skillet and let rest for at least 5 minutes before slicing.
  5. Wipe out the skillet and add the remaining oil, heating over medium-high heat.
  6. Add chickpeas to the skillet and cook, stirring occasionally, until slightly crispy, 3 to 5 minutes.
  7. Stir in the tomatoes, cilantro, lemon juice, and remaining salt and pepper. Heat through.
  8. Divide sliced steak and tomato-chickpea mixture among serving plates. Sprinkle with feta cheese.
  9. Serve over greens.
