Grass Fed Beef & Guinness Stew Recipe

  • 16 oz. grass-fed beef chuck roast
  • 2 cup(s) Imagine Organic Beef Stock
  • 2 Tbsp. organic tomato paste
  • 3 medium organic carrots
  • 1 tbsp. organic unsalted butter
  • 12 oz. Guinness Stout beer (1 pint)
  • 2 c. chopped organic onions
  • 4 cloves organic garlic, smashed
  • 4 tsp. chopped fresh sage
  • 2 tsp. arrowroot
  • ¼ tsp. Celtic sea salt
  • ½ tsp. freshly ground black pepper
  1. Cut beef and carrots into 1½ inch chunks.
  2. Heat oil in heavy large deep pot or Dutch oven over medium-high heat. Sprinkle beef with salt and pepper.
  3. Working in batches, add to pot and sauté until browned, about 8 minutes per batch. Transfer to bowl.
  4. Add onions, garlic, and herbs to pot. Sprinkle with remaining salt and pepper. Sauté until onions begin to soften, about 5 minutes.
  5. Add tomato paste and arrowroot; stir 1 minute. Add beer; stir until thick and smooth, scraping up browned bits, about 2 minutes. Add broth, then beef with any juices; bring to simmer.
  6. Cover partially, reduce heat to medium-low, and simmer 45 minutes. Add carrots; simmer partially covered until beef and carrots are tender, stirring occasionally, about 45 minutes.
  7. Serve.
