  • 1 cup Eden Foods Organic Garbanzo Beans (Chick Peas) Eden Organic Garbanzo Beans
  • 16 Tbsp. Sunspire Organic Semi-Sweet Chocolate Chips Sunspire Organic Chocolate Chips
  • 4 large pastured eggs
  • ¾ c. erythritol
  • ½ tsp. non-aluminum baking powder
  • ½ tsp. SweetLeaf® Stevia Extract SweetLeaf Stevia Extract
  1. Preheat the oven to 350 degrees F. Grease and flour a 9 inch round cake pan.
  2. Drain the beans and rinse well.
  3. Add the chocolate chips to a double boiler and melt over low heat.
  4. Add the beans and eggs to a food processor or VitaMix. Process until smooth.
  5. Add the erythritol, stevia and the baking powder, and pulse to blend.
  6. Pour in the melted chocolate and blend until smooth, scraping down the sides.
  7. Transfer the batter to the prepared cake pan.
  8. Bake for 40 minutes, or until a knife inserted into the center of the cake comes out clean.
  9. Cool in the pan on a wire rack for 10 to 15 minutes, then invert onto a serving plate.
