
Garbanzo Bean Chocolate Cake (Gluten Free, Grain Free, Low Carb)
- 1 cup Eden Foods Organic Garbanzo Beans (Chick Peas) Eden Organic Garbanzo Beans
- 16 Tbsp. Sunspire Organic Semi-Sweet Chocolate Chips Sunspire Organic Chocolate Chips
- 4 large pastured eggs
- ¾ c. erythritol
- ½ tsp. non-aluminum baking powder
- ½ tsp. SweetLeaf® Stevia Extract SweetLeaf Stevia Extract
- Preheat the oven to 350 degrees F. Grease and flour a 9 inch round cake pan.
- Drain the beans and rinse well.
- Add the chocolate chips to a double boiler and melt over low heat.
- Add the beans and eggs to a food processor or VitaMix. Process until smooth.
- Add the erythritol, stevia and the baking powder, and pulse to blend.
- Pour in the melted chocolate and blend until smooth, scraping down the sides.
- Transfer the batter to the prepared cake pan.
- Bake for 40 minutes, or until a knife inserted into the center of the cake comes out clean.
- Cool in the pan on a wire rack for 10 to 15 minutes, then invert onto a serving plate.
