Crustless Crab Quiche Recipe

Serves: 6
  • 8 oz. organic, grass-fed Swiss cheese
  • 2 Tbsp. fresh organic parsley, chopped
  • ¼ c. organic roasted red peppers, chopped
  • 6 large organic omega-3 eggs
  • ⅓ c. chopped organic onion
  • 12 oz. organic evaporated nonfat milk
  • 12 oz. lump crab
  1. Preheat oven to 350 degrees.
  2. Spray quiche pan with nonstick cooking spray.
  3. Spread the crabmeat, onion and parsley in the bottom of the quiche pan.
  4. Sprinkle half of the Swiss cheese over the ingredients in pan.
  5. In a medium mixing bowl, crack the eggs and whisk slightly. Add the evaporated milk and whisk to mix.
  6. Pour the egg mixture over the crabmeat in the quiche pan.
  7. Top with the remaining Swiss cheese. Sprinkle the roasted red pepper over the top of the quiche.
  8. Place in the oven and bake for 45 to 50 minutes or until lightly brown around the edges.
  9. Insert a knife in the center to ensure quiche has set.
