  • 2 Tbsp. lemon juice
  • 1 medium scallion, minced
  • 16 tbsp. pine nuts, soaked overnight
  • ¼ tsp. Celtic sea salt
  • 1 Tbsp. filtered or spring water
  • 1 tsp. fresh thyme
  1. Drain and rinse pine nuts.
  2. Place pine nuts in a food processor or Magic Bullet, with lemon juice and water.
  3. Process for 1-2 minutes, scraping down side of processor frequently, until smooth and creamy.
  4. Add scallions, thyme and salt, and process until texture of ricotta.
  5. Transfer to a serving dish.
  6. Serve with fresh seasonal veggies.
